Do you think vegetables are just plain boring? Do you eat them just because you should? Well I am here to tell you, it’s time to spruce up those veggies. My children, ages 10 & 6, love their vegetables. Here’s why they do…..because they are interesting, flavorful and just plain delicious. Even my husband NOW eats his veggies! Check out this really easy roasted broccoli and cauliflower recipe and make vegetables fun again!
Preheat Oven to 425
1 head of Broccoli
1 head of Cauliflower
1-2 tablespoons of a good Extra Virgin Olive Oil
1-1 ½ teaspoons of Kosher salt
¼ teaspoon of pepper (if desired)
Directions:
Cut up the broccoli and cauliflower and spread all the florets onto a large cookie sheet (you want the veggies to have enough room to roast) then pour the olive oil all over the broccoli and cauliflower and sprinkle with salt and pepper. Then toss the veggies with your hands to coat all the pieces. Place the vegetables in the oven and bake for 25-30 minutes. Check them periodically to make sure they are not burning. The vegetables should be golden to dark brown, if they are not place back in oven for 5 min intervals till desired doneness. Serve HOT and Enjoy!
